Kenyan Chapati with mixed vegetables and chicken



Because of the visit of Barbara, a very good friend I met in Kenya in 2009, yesterday we made kenyan chapati with vegetables and some chicken.

For 4 persons you need:

500g flour
2 carrots
A half of an onion
A quarter of a teaspoon of salt
2 teaspoons of sugar
Some warm water
4 teaspoons of oil (sunflower oil or maize oil; but not olive oil)

For making the dough of the chapati you grate the carrots and the onion very fine.


Mix it with the flour, the salt, the sugar. You put some warm water (little by little) into the ingredients and mingle it until the dough is fine and is not stucking on the sides of the mixing bowle. After that you put the oil into the dough and mix it again until you have a soften dough.


You cover the dough with a plate and leave it for at least 30 minutes.

In that time you prepare the mixed vegetables:

2 tomatoes
Half of an onion
5 carrots
1 zucchini
1 paprika
500 g of broccoli
2 patatoes
1 piece of garlic of the bulb

You clean the vegetables and cut them into small pieces and heat some oil.



You heat the onions until they are brown and then the tomatoes and the garlic. After that you add the other vegetables and cook everything with a cup of water. Then add some spices, like salt, curry, pepper.

For the chicken you mix the oil with some curry powder and some salt and mingle it with the chicken and leave it to absorb. Then fry it in a pan until it is getting brown.



For finishing the chapati you roll the dough out on a place with some flour and apply some oil on it.
Cut with a knife small lines and roll them into small pieces.


You roll out the small pieces into round circles.



Put the circles into a very hot pan, fry them until the first side is getting brown, turn them and put some maize oil in the pan. Both sides have to be brownish.



Serve the hot chapati with the cooked vegetables and the chicken.
